The Best Oatmeal Chocolate Chip Cookies
Oatmeal cookies brings back so many memories. When done right they are soft and chewy in all the right places. This is one of our favourite recipes making 11-12 cookies.
Ingredients
- 1 large egg
- ½ cup unsalted butter
- ½ cup light brown sugar (packed)
- ¼ cup granulated sugar
- 1 tablespoon vanilla extract
- 1 ½ cup old-fashioned rolled oats
- ¾ cup all-purpose flour
- ½ to 1 teaspoon cinnamon (add to taste preference)
- ½ teaspoon baking soda
- Pinch of salt
- 1 heap cup semi-sweet chocolate chips
Directions
- Combine egg, butter, sugars, vanilla in a bowl and beat on a medium-high speed until creamed and well-combined (about 4 minutes)
- Add the chocolate chips and beat on a low-speed until combined
- Scoop cookie batter to form approximately 11 equal-sized mounds of dough, roll into balls and flatten slightly (we like putting a few strategically placed chocolate chips on top to make them pretty J )
- Place mounds on a tray, cover with plastic wrap and refrigerate for at least 2 hours (unchilled cookies will be sad, flat and spread into each other L )
- Preheat oven to 350F
- Bake cookies for about 11 minutes (this makes super soft cookies, bake longer for more well-done ones) – or until edges have set
- Allow cookies to cool for about 10 minutes before serving
